Red Pepper Jelly
 
I ended up adding about ½ cup of water towards the end to cook up because my mixture got a little too thick. Also - most of the recipes I found had twice the amount of sugar that I ended up adding. I thought mine was plenty sweet.
Ingredients
  • 1.5 pounds sweet peppers
  • 3 tsp red pepper flakes
  • 1 cup sugar
  • 1.5 cups white vinegar
  • ¾ tsp salt
  • Water as needed.
Instructions
  1. Pulse peppers with red pepper flakes in a food processor until finely chopped.
  2. Stir together peppers, vinegar, butter, salt and sugar in a heavy pot and boil for about 20 minutes.
  3. If your mixture gets a bit too thick add in a little bit of water.
  4. Keep in frig for a few weeks or can accordingly.
