Pasta Salad
 
Ingredients
  • 2 cups dry pasta
  • 2 carrots, chopped
  • 2 stalks of celery, chopped
  • ½ block Kerrygold Dubliner cheese, chopped in small blocks
  • ¼ red or greenpepper, chopped
  • ¼ red onion, finely chopped
  • 1 cup frozen peas
  • Dressing
  • -------------------
  • ⅓-1/2 cup mayonnaise (preferably homemade)
  • 2 T maple syrup
  • ¾ tsp salt
  • 1 T white wine vinegar
Instructions
  1. Cook pasta according to directions, drain and let cool.
  2. Mix dressing and add in all other ingredients including pasta.
  3. Let cool in the refrigerator for a few hours.
  4. Mix before serving.
