Work is s l o w and I'm down with the Covid, so what a better time to replace that gross looking Chickpea salad picture with something better. At least a little more appetizing. I looked through the pictures that I had taken awhile back and found a few that I haven't posted about yet. I'm going to go with the Butter Cake that was surprisingly good for as healthy as it is. Sometimes you make … [Read more...]
Chickpea Salad
I have a hard time deciding what to make for lunch. I'm often still cleaning up breakfast dishes by the time the kids are hungry. Again. One of my favorite lunches is chicken salad but I'm often not on the ball enough to have the chicken thawed out let alone cooked. I found a recipe for chickpea salad in one of my cookbooks. I did not have high expectations, that's for sure. Garbonzo beans or … [Read more...]
Smoked Ice Cream with Honey Caramel Sauce and Candied Cocoa nibs
About a year ago my husband surprised me with a trip to Napa with a "layover" in San Francisco. Our whole trip revolved around food and drink. We got to eat Lemon Almond Tea cake at Tartine (my fave), fried chicken at Wayfare Tavern and a 5 course dinner at Michelin star restaurant Saison. (You only turn 40 once). The five course meal was one of the most interesting experiences I've had when it … [Read more...]
Soaked Granola
What a squirrel. My littlest says 2 things before his eyes are even open in the morning. "Mom, would you please put your hair down" and "Can I have granola and milk with syrup". Yes to both. Because he is such a granola lover and it's the first thing he puts in his little body, I want to make sure it's the healthiest as possible. Oats can be a little hard on your body to digest, so I've … [Read more...]
Sourdough Bread
Sour dough sounds like a lot. It can take all day, you have to be super careful with the dough, etc etc. It is and you do, but it's not hard. And it's totally worth it. Once you do it one time you'll get the hang of it. If you start it early (around 7am-ish) you will have the bread in time for supper. I have made it with the long rise over night and then bake it in the morning which is what … [Read more...]
Sourdough Crackers
We typically buy our local bakery's sourdough bread from our Coop once or twice a week. You really can't get better than their sourdough - slathered with butter. Since we aren't even going into our Coop (they shop for you AND put them in your vehicle for you) we aren't getting our usual fix. They've also been out of it every time I order. That's when I decided to start to try my own sour … [Read more...]
Chocolate Hazelnut Cake
This cake is good. Real good. It's also very versatile. As I bit into this warm crumbly (in a good way) cake, my mind was swirling with the different variations I could make if I wasn't in the mood for chocolate hazelnut (huh?!). Fresh cranberries with orange zest; fresh raspberries with a little almond extract... This cake is actually gluten free. I use a homemade blend of different types of … [Read more...]
Gluten Free Flour Blend
I'm not gluten free. Far from it. I love my white bread. However, I have people in my life who are. This recipe is from one of my very favorite cookbooks Huckleberry. There is not one thing that I have made from this book where I was disappointed. It's my go to cook book. Most gluten free blends are gummy and gross in my opinion. This is not. It's a combo of potato starch, oat flour, corn meal … [Read more...]
Chocolate Caramel Bars
Does anyone bake or cook when they are anxious? I do. I remember when I was about 20 I was trying to figure out the next "career change". I was working at a residential real estate agency and was offered a job in the commercial side of the office. I knew I didn't want to stay where I was, but wasn't sure if commercial was my thing. I went home over lunch and baked some chocolate chip cookies, … [Read more...]
Fear Not
Maybe we need to regroup a bit. Spend time at home. Reset on what is really important. We are called to not fear. Let’s try that. And maybe cut out the sweets 😉 … [Read more...]
