One thing is for sure – I struggle with making and eating breakfasts. I make the occasional muffins or pancakes or hot cereal – but it seems most days we are in a hurry and need to grab something quick before heading out the door. This breakfast pudding is a complete hit at our house. I make it the night before and we can grab it and have it on the road. It’s filling – but not over the top – and having the added protein of the chia seeds makes it “stick to your ribs” til noon.
I also use chia seeds to make this pudding.
Add in a little vanilla.
And a little maple syrup. Give it a good shake.
And the next morning you will have a perfect breakfast on the go.
There are lots of flavors or changes you could make – a dash of cinnamon and a few raisins; a sprinkle of mini chocolate chips; blueberries and a few chopped almonds; sliced bananas and walnuts; dried coconut and pineapple pieces; ….the list goes on and on! Be creative!
- ½ cup organic oatmeal (gluten free if you wish)
- ½ cup whole milk
- 1 T chia seeds
- ¼ tsp vanilla
- sprinkle of sea salt
- 1 T maple syrup
- Pour oatmeal in a glass jar.
- Pour in chia seeds, milk, vanilla, salt and syrup.
- Shake well.
- Put in the refrigerator until morning
