Sorry I’ve been MIA lately.
I’ve been catching up on a few things – trying to get organized and such. It seems the more I sort through and organize, the more I find to do. Oh well. Yesterday I cleaned the house from top to bottom and mid-way through decided to sort through the kids’ toys. It didn’t occur to me that I had taken on a little too much until I was knee deep in stuffed animals and musical instruments. Why do they need this much stuff?? Hours later, books were with books, the tambourine was with the other musical items and the tractors were all put away with the cattle and horses. Now…how long will it stay like that??
I made these bars last week when I wanted something sweet. They do have chocolate chips in them – but not too many. They are also sweetened with honey so I don’t feel real terrible about eating them… They are kind of a staple in our house because they’re so easy and I have usually everything on hand.
Let harden in the refrigerator for a few hours.
- 1 cup organic peanut butter
- ½ cup raw honey
- ½ coconut oil
- 2 cups organic oats
- 1 cup organic coconut
- ½ cup organic raisins
- ¾ cup chocolate chips
- 1 tsp vanilla
- Mix the peanut butter, honey, coconut oil and chocolate chips over low heat until melted.
- Add in the vanilla, oats, coconut and raisins.
- Spread in a 9x13 or smaller - depending on how thick you like them.
- Let cool and store in the refrigerator.
