It’s a snowy Saturday afternoon and we are all cozied up in the house. I’ve got a plan for supper and work is almost done. Isla is taking her afternoon nap and Ollie is working on his “art projects”. I plan on planting it on the couch and reading 2 Saveur magazines that have been sitting on my coffee table for over a month. We’ll see if that actually happens…
These morning glory muffins are a good healthy breakfast muffin. Made with almond flour, coconut, carrots and apple – they are pretty hardy.
It all started with this poor apple. Isla’s new favorite spot is in the refrigerator. She sneaks in front of me when I open it up, stands her little feet on the bottom and digs through anything she can find. I’ll find little bites out of my apples, pears and oranges.
Baked to perfection – around 20 minutes.
I kept about half of them out and the other half I put in the freezer.
- 2½ cups almond flour
- 2 tsp cinnamon
- ¼ tsp cardamom (optional)
- ½ cup butter or coconut oil
- 3 eggs
- ¼ cup honey
- tsp vanilla
- ½ tsp salt
- 1 tsp baking soda
- 1 apple, grated
- 2 carrots, grateed
- ½ cup raisins
- ½ cup coconut
- Preheat oven to 350.
- Whisk eggs, honey, oil or melted butter and vanilla together.
- Add in almond flour, cinnamon, cardamom, baking soda and salt.
- Add carrot, apple, coconut and raisins and combine well.
- Spoon into muffin tins
