There are so many days in which it’s 2pm and I realize I forgot to put the chicken in the crockpot. Oh well – I’ll just get some hamburger out. 5:45pm rolls around and I realize I forgot to do that too. One of our favorite quick meals is gluten free waffles and bacon. It’s quick and easy and not the unhealthiest.
First thing you need to do is heat the oven to 400. I’ve been known to push it to 425 when we’re real hungry.
Lay the bacon on parchment paper. Then lay another piece of parchment paper on top. This prevents the grease from splattering all over your oven. This is really the only way to do bacon. Once the bacon is in the oven start on the waffles.
Cream and eggs. A touch of honey, vanilla and a sprinkle of cinnamon.
I’ve found that about 1/3 cup of batter works well for our waffle maker.
Let ’em cook for a couple of minutes. Our machine beeps when it “thinks” it’s done. It’s pretty accurate.
Golden Brown. Delicious. I usually keep the first few warm stacked on a plate under a dish towel. By this time your bacon should be nice and crispy (that’s how we like it). About 20 minutes. Slather on the butter and pour on the syrup.
- 2 cps almond flour
- 1 tsp baking powder
- ½ tsp baking soda
- 2 T honey
- ¼ tsp cinnamon
- ¼ tsp salt
- 1 tsp vanilla
- 3 eggs
- 1 cp buttermilk or your choice of milk
- Mix the eggs and milk together (I had cream that needed to be used up so that's what I used).
- Add in the honey, vanilla, salt and cinnamon.
- Mix it well.
- Add in the almond flour, baking powder and baking soda.
- Mix it until there are no lumps.
