We’ve been doing a ton of yard work lately. With it being warm out we really don’t feel like coming in and eating a hot heavy meal. These spring rolls are the perfect light meal.
Spring rolls are a little intimidating. Don’t be fooled. Once you get the hang of the rice paper it’s super easy.
You can really use any vegetables you want. I just went to the market and picked what looked the best. I got green pepper, cucumber, carrot, green onion, cabbage and cilantro.
Rice paper and rice sticks.
Green onion, garlic, ginger and soy sauce for the dipping sauce. I’ve used coconut aminos in place of the soy sauce and it’s really good too.
Chop all of your vegetables into matchsticks. (Looks like I needed a red pepper instead of green.) While I was boiling the rice stick noodles (for 3 minutes) I threw in 3 leaves of cabbage at the end to soften them up a bit before I chopped them. I had them in the boiling water for less than a minute. Then I cooled them off in some cold water.
I’ve found the easiest way to deal with the rice paper is to have a large bowl full of hot water. Dip the edges in a few times all the way around and then dip the entire rice paper in. It will be flexible but not soggy. Pile on the veggies in the middle about 2/3 the way down.
Fold the bottom end of the rice paper over the vegetables and tuck under.

Roll up tight.
The first time Ollie ate these he said, “You mean you can eat the rubber part??” 🙂
Yes – eat the rubber part.
- 1 cucumber
- 2 carrots
- napa cabbage
- 1 pepper
- rice paper
- rice noodles
- Dipping Sauce
- ½ cup soy sauce
- ¼ cup rice vinegar
- 2 tsp sesame oil
- 2 T honey
- 1 tsp minced garlic
- ¼ cup scaliion
- Mix all of the dipping sauce ingredients together and set aside.
- Boil the rice noodles for 3 minutes or according to the directions.
- Drain and let cool.
- Cut the vegetables into matchsticks.
- Wet the rice paper in a bowl of hot water so it's pliable.
- Pile on your veggies, cilantro and a small pile of noodles.
- Wrap up like a small burrito.
- Continue until you're out of ingredients.
- Serve with dipping sauce.
