One of my all time favorite desserts/treats is a special K bar – or scotcharoo. You know the one I’m talking about. Sugar, peanut butter, corn syrup, butter scotch chips and chocolate chips. Are they ever good. But, I’m not one to eat just one. or 2 really. Pretty soon my belly hurts and my teeth are gritty with sugar. I’m sure I’ll eat them again – but maybe just on my birthday. Go out with a bang. I found this recipe on Heavenly Homemakers. She’s got so many good recipes! I swap out the peanut butter for almond butter and add in a few more chocolate chips. This is the closest thing I’ve found to the “real thing”. It is definitely one of my favorite recipes and so very easy.
Melt the nut butter of your choice and honey until it bubbles. Add in your vanilla and then your rice crispies.
I usually use Brown Rice Cereal. I had bought some sprouted brown rice cereal awhile back – so that is what I used this time. Although… everything I read about anything puffed – especially cereal – is that it’s terrible for you. This article on the Weston A. Price website tells you all about it. Ok – back to the bars 🙂
How good do these look? Store them in the refrigerator. They are even better the 2nd day.
- ¾ - 1 cup almond butter
- ½ cup honey
- 3-4 cups brown rice crispies
- 1 tsp vanilla
- ½-3/4 cup chocolate chips
- Heat the honey and almond butter over low until it just starts to bubble
- Add in vanilla
- Stir in rice crispies
- Sprinkle in chocolate chips
- Quickly pour into a 9x9 pan so the chocolate chips don't completely melt
- Store in the frig
