My best friend’s birthday was the other day. I make her a Birthday cake every year. I always demand her to pick a “favorite”. Last year it was Paleo Pineapple Upsidedown Cake – which was actually very good. This year she wanted white cake with pink frosting. Love her 🙂
I thought about making a white cake from scratch but just didn’t feel up to it the day before her birthday. Enter Betty Crocker.
I baked the white cake just as the directions told me. With the advice of another dear friend who decorates cakes, I added in a 1/2 cup of sour cream to the batter. I baked them in 2 9 inch rounds.
To make the frosting I took about 2 cups of fresh organic strawberries (organic strawberries mixed with white powdered sugar…?? pretty sure that’s just wrong.) I dumped the strawberries in my vitamix and pureed them for a minute. I then cooked them down for a good 20 minutes to they were thick and syrupy. I then let them cool.
1 stick of butter
1 tsp vanilla
1 bag of powdered sugar
I blended the butter until it was really creamy and added in about a cup or so of powdered sugar and the vanilla. I then slowly added the strawberries a little at a time – and back and forth with the powdered sugar.
After it was all blended and the cakes were cool I split the cakes each in half. I spread frosting on the halves and layered it and then frosted the outside.
I had some frosting left so I put a little in a pastry bag and went around the bottom to finish it off.
My friend was kind enough to share a piece with all of us. It was pretty sweet – but after not having a box cake in FOREVER – it tasted pretty good 🙂 Glad she only has a Birthday once a year.
