Jason has to work this afternoon so I wanted to send him something for supper. I had a package of tortillas that needed to be used up. Enchiladas? Why not. I rarely ever used canned enchilada sauce because it’s filled with soy oil and from what I’ve read the furthest we stay away from soy products the better we are.
Here’s that I did –
1 jar of tomato sauce
tomato paste
a dash of each – onion powder, garlic powder, salt, pepper, and a big dash of chili powder
a splash of olive oil
Let this simmer for about a half an hour
8 ouces of cheese (I had a brick of monterey jack cheese that I grated)
Add about half of this sauce to some sort of meat (I had left over chicken I had made the night before in the crock pot)and half of the cheese. I also threw in a small can of green chilies. Take the meat mixture and put it in the tortilla shells. Pour the other half of the sauce on the filled tortillas. Sprinkle the rest of the cheese on. Bake for about a half an hour at 350.
